oh she glows cookbook

if you haven't already purchased this cook book - you must!  being totally honest i am not the best in the kitchen, nor do i spend a lot of time in the kitchen.  i have my go-to's that i make weekly and i keep things extremely simple, which is one reason i fell in love with the "oh she glows cook book".  today i am sharing with you some of my favourite, simple, quick and easy to make recipes. i focused on recipes that are great for throwing in the freezer so you can grab them daily for easy, healthy snacks throughout your week.

i selected recipes that use a lot of the same ingredients and ones that i know i will use on a regular basis, so I'm not spending heaps of money to make just one thing.  all ingredients and prep/cooking time is below for you so you can decide if it's the right recipe for you.  to see the full recipe and instructions visit Angela Liddon's site at  ohsheglows.com where you can also purchase her cookbook.

our favourite veggie burger - pg 155.  what you need: ground flaxseed, black beans, grated carrots or sweet potato, fresh parsley or cilantro leaves, garlic, red or yellow onion, sunflower seeds, gluten free oats, spelt bread crumbs, olive oil, tamari, chili powder, dried oregano, ground cumin, sea salt & black pepper.

prep time is about 25 minutes and cool time is 30-35 minutes.  5 easy steps to follow and you have the most delicious veggie burgers that can be served so many ways.  i personally wrap mine up individually and because there is so much flavour in these burgers i bring one along with me and eat it throughout the day for a healthy snack/lunch.

oil-free baked falafel bites - pg 95.  what you need: garlic, red onion, fresh cilantro & parsley, chickpeas, ground flaxseed, spelt bread crumbs, ground cumin, sea salt.  this recipe also calls for a food processor (which i don't have) so i used my blender and it worked just fine;)

prep time is 30 minutes and cook time is also 30 minutes.  these little bites are great served as an appetizer as this recipe makes 22 bite size falafels and there is also a delicious tomato - cucumber salsa for dipping if you choose.  i again put mine in the freezer and bring them with me to have as snacks throughout my day.

classic glo bar - pg 215.  what you need:  rolled oats, rice crisp cereal, hemp seeds, sunflower seeds, unsweetened shredded coconut, sesame seeds, chia seeds, ground cinnamon, sea salt, brown rice syrup, peanut butter or almond butter, pure vanilla extract, chocolate chips (optional).

these are a must have to keep in your freezer for that on-the-go snack.  i doubled this recipe and froze half of them and then kept the other half in the fridge so they were ready to eat.  so great for a quick bite before an early morning workout or to have with you throughout the day for a quick pick me up.  they are fresh in the fridge for 2 weeks and can last for a month if placed in the freezer.

place in freezer for at least 10 minutes or until firm before you take them out to cut up into individual squares.

homemade yolos - pg 263.  what you need:  pitted soft medjool dates, peanut butter or any other nut butter, sea salt, dark chocolate chips, coconut oil & blender.

prep time is about 25 minutes then put in freezer right away.

the first two pics below are a little trick so that you don't have to scrub burnt chocolate off of your pot.  place a glass measuring cup in your sauce pan that is filled with water, this saves you the mess of having to scrub that burnt chocolate off the pan! 

this recipe makes about 20 bte size yolos - if you are like me and love frozen dark chocolate and peanut butter this is the perfect snack for you!  place them in the freezer and enjoy!

peanut butter cooke dough bites - pg 235.  what you need:  oats, coconut oil, peanut butter or another type of nut butter, maple syrup, vanilla extract, almond flour or almond meal (i did not have almond flour so you can see in the picture below just blended up some almonds), sea salt, dark chocolate chips.

these delicious bites only take 15 minutes to prep and require 10 minutes to chill before eaten.  another very easy snack to keep in the freezer for a quick snack.

as you can tell based on my recipe choices, peanut butter is a favourite in all of my snacks!   these are just a few easy recipes for you to follow but honestly i have almost every corner of every page folded over.  if you like simple, quick, healthy recipes this is the exact book for you - i promise!
